Give us a little background on yourself 

Originally born in Michigan and raised in Colorado, I currently live in Parkland Florida. I have been married to my wonderful wife, Debra, for 25 years. We have two kids. Haley, 23, lives in Colorado. Cooper, 20, is a Junior at FSU. Both are Florida natives along with my wife.

The restaurant business has been a part of my life since the age of 14 when I started washing dishes at Gleneagle Country Club. Besides country clubs, I have worked in hotels and all types of restaurant operations. Sports have always been in my life, and I am a die-hard Denver Bronco fan. I also have had the pleasure of working for the legendary coach, Don Shula. Besides work and family time, we are huge fans of the Best Buddies organization. We are big on entertaining at the house, as well.

Out of all the lines represented by Eaton Marketing, which one is your favorite? Why?

Perlick. It provides an ability to customize, is top quality, always innovating based on customer feedback, and a great team to work with.

How does Perlick provide a return on investment for operators?

Has allowed my bars to operate more effectively and efficiently, leading to better guest service, improved product consistency, lower beverage costs, and lower labor.

Tell us about the most successful install you've ever seen using products from this line.

A project for Café Tu Tu Tango in Orlando, Florida. The draft system was over a 100 ft run, and the tower was inverted for a killer custom look. The actual bar space was very small, but the Perlick team and Randy Souza helped to develop the most efficient use of space for the bar team.

Where is your favorite place to go out to dinner? 

Café Tu Tu Tango.

What do you usually order when you're there? 

Cajun chicken egg rolls and craft beer.

How has foodservice equipment changed in recent years? 

Equipment has become much more efficient and smarter. The industry has really done a great job listening to operators’ feedback, and it shows in new features and efficiencies.

What do you see in store for the foodservice industry?

Continued innovation leading to even more energy savings, lower Cost of Goods, and improved labor productivity.
