A true round stone hearth oven is incredibly versatile and can be used to roast, grill, bake, fry, sauté, steam, and more. With different heat zones in the oven, items requiring cooler temperatures should be placed near the mouth of the oven, while items requiring the most intense heat should be placed in the back. Cooking with a wood fire is incredibly forgiving despite the high temperatures in the oven. Items can even be cooked, reheated, or even par-baked elsewhere. They can be finished off in a stone hearth oven. They can be used for smoking and braising. They can be used for just about anything a chef imagines. So what should you look for in a stone hearth pizza oven? **FLEXIBILITY** The heat source in a stone hearth oven should provide some flexibility to a Florida restaurant or foodservice operator. Look for a pizza oven that can be used as a wood fired oven, gas fired, or a combination of both. **INSTALLATION** The easier to install, the better. Some stone hearth pizza ovens are supplied as two-part assembly for easy installation. Also look for units that come standard with legs and any external insulation materials. **VISABILITY** Sometimes it's easier to cook perfect food when you can actually see it. Look for features like spotlights, viewing windows, multiple openings and doors. These can increase your visibility options. **ACCESSORIES** A well-made stone hearth oven will come with option. Consider accessories like char grills and rotisseries to expand your cooking capabilities. **CONFORMITY** How well an oven fits into your kitchen will likely determine whether or not it will be a successful unit. Consider a line that meets your shape and size requirements. If it doesn't, does the manufacturer have the ability to create something that does? ### **Learn more about stone hearth** **ovens.** Download the Ultimate Guide to Stone Hearth Ovens, and get all the facts from one of the world's leading manufacturers of stone hearth ovens, pizza ovens, and other international cuisine oven options like tandoor, shawarma, duck ovens, and spectacular cooking equipment.
