Well, the simple answer and definition to this question is that this is a type of freezer that is extremely cold. The alternative name for this kind of freezer is a blast freezer, perhaps due to the synonymous relationship between the two. The fundamental principle between of how the freezer works is that it decreases the temperatures of the food products so much so that it slows down metabolism in the particular plant cells. The amount of time that it takes for crystallization to occur is directly proportional to the quality of the end product. The longer it takes to freeze a food product, the larger the crystals that form in the long run and the greater the damage to the food. The use of shock freezers gives a client some form of convenience since it rapidly cools the food, thus forming small crystals. Once the food is frozen, it may be transferred to a conventional freezer for extended storage time. There is one condition however; the second freezer must be able to sustain the required low temperatures in order to keep the food fresh.
